Scrumptious food. Everyday started with a glorious fruit salad. What a lovely healthy way to start the day 🙂
Lunch tended to be homemade hummus and salad. I picked up some dried chickpeas from the local supermarket, soaked them overnight and boiled them in the morning for a couple of hours. I then had to mash them with a fork!!! And mix them with olive oil, lemons, garlic, a bit of water to get the right consistency and seasoned to taste. It is a quick easy recipe and it tasted good.
And then BBQ for dinner, salsa, guacamole, tofu burgers, sweetcorn, peppers, courgettes, aubergine.
The food was fresh, glorious and lovely. I have started eating more raw veggies since I have come back and loving it. I have also subscribed to the raw food magazine Get fresh. It is full of interesting raw info.
