This week I have been reading [intlink id=”3″ type=”category”]plant based nutrition and health by Stephen Walsh[/intlink].  It is a fascinating book.  He compares consumption surveys from around the world and summarises the results and best food options.  As a result of his fine advice I have started taking a daily B complex and learned that I need to ground flax seeds before consumption and I am still only half way through it!

Stephen has been inspiring me all week in my food consumption choices….

Home made museli made from oats, crunched up bran, goji berries, raisins, seeds and ground nuts which fills me up until lunch time.

Green salad with falafel and seeds with a drizzle of olive oil.  I use kale, lettuce, spinach, spring onions, avocado & cucumber with shop bought falafel.  Despite printing several falafel recipes I still haven’t had the courage to make any.  Maybe one day soon…

Snacking on super sprouts and trail mix to help me get through to dinner time.

Asian veggie curry with rice noodles for dinner.  These curry cubes can be picked up from any Asian supermarket and make a quick easy dinner in 10 mins.  Just chop up your veg, add the cube, water and cook.

 A healthy pudding too.  Rhubard crumble & custard with a really healthy crumble made from oats, brown sugar, flour, cashew nuts and olive oil.

  • Hi Sasha, you should try some ground flax seed in your smoothies- a tablespoon in there will cover you for the day and it taste delish- I had mine today on my porridge, stirred in just before I eat it although I often have it in smoothies, it really fills me up. It’s better there than for example in the crumble as it’s best eaten uncooked (although you will have read that in the book). I think Stephen Walsh’s book is excellent. The supplement I take is the Veg1 supplement from the Vegan Society, that covers any pitfalls imho.
