  • 1 cup milk
  • 1 1/4 cup flour
  • 3/4 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 cup oil
  • 1/2 cup sugar
  • 2 tsp vanilla
  • vanilla icing
  • rock salt (or if you’re fancy fleur de sel)
  • 1 can coconut milk
  • 3/4 cup sugar
  • 1/2 tsp coarse salt
  • For the caramelised sugar decoration
  • 1 1/4 cup sugar
  • 1/4 tsp salt
  • 3/4 cup water
  • sprinkling of coarse salt
  • Step 1 Preheat oven to 180ºC, line baking tray with cases..
  • Step 2 Combine the milk, the sugar, oil and vanilla.
  • Step 3 Sift all the dry ingredients, add the milk mixture. Mix well.
  • Step 4 Pop the cupcakes in the oven for 20 mins and get on with the other bits.
  • Step 5 Combine all the dulce le leche ingredients in a pan and whisk till sugar has dissolved. Then bring to boil till it reduces down, this should take about 15 mins. Remove from the pan and allow to cool.
  • Step 6 Next is the caramelised sugar decorations, I used the method from Sprinkle Bakes.
  • Step 7 Allow the cupcakes to cool, then cut out the tops and fill with the dulce de leche, add the remainder of the dulce de leche to your vanilla icing then ice the cupcakes and add a caramelised sugar decoration and sprinkle pinch of rock salt over the icing.
