The majority of the recipes I have come up with myself have been for the Lil Man and there’s nothing better we like then to get our aprons on of a weekend. One of his favourite bed time stories is The Gingerbread Man, so of course we had to bring the story to life.

Gingerbread biscuit

The mixture turned out too wet to use a man shaped cookie cutter but that did not stop the Lil Man from happily munching away on them.

Gingerbread biscuits

Ingredients

  • 1 1/2 cups plain flour
  • 1 tsp baking soda
  • 1 cup margarine
  • 1 banana mashed
  • 1 dessert spoon molasses
  • handful dates chopped into small pieces
  • handful apricots chopped into small pieces
  • 1 tsp cinnamon
  • 1 inch fresh ginger grated
  1. Preheat oven to 180ºC.
  2. Mix the margarine, banana and molasses.
  3. Sift all the dry ingredients, add the margarine mixture. Mix well.
  4. I piped the mixture onto a silicone matt on a baking tray, but you could spoon the mixture on.
  5. Bake for 23 mins.

Another recipe that is good to make with the help of a little person is muffins.

Chocolate and sultana muffins

Ingredients

  • 2 mashed bananas
  • 8 dates chopped into small pieces
  • 1/2 cup wholemeal flour
  • 1/2 cup plain flour
  • 1/4 cup cocoa
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 cup oil
  • 2/3 cup ‘milk’
  1. Preheat oven to 180ºC.
  2. Sift the flour, cocoa, baking soda and baking powder.
  3. Combine the ‘milk’, oil and banana then mix with the flour and add the dates.
  4. Spoon the mixture into a muffin tray, this mixture makes 30 mini muffins.
  5. Bake for 18 mins.
  6. These can also be frozen.
