Unfortunately this is not a blog about “What vegan seat?”  I am not an expert in this area, I can’t add anything useful or constructive… However I can show you what this vegan has been eating of late….

Assorted salad: puy lentil, spinach & roasted sweet potato dressed in olive oil and balsamic vinegar, coleslaw & toasted walnuts, organic hummus, plain chickpeas, sun-dried tomatoes and olives and “buttered” bread.

Crispy “duck” and plum sauce wraps: I chopped up carrot, spring rolls, cucumber into julienne pieces, fried Vbites duck as per the instructions of the packet, soaked the rice spring rolls skins (bought from Sainsbury’s as part of a pack) in hot water.  Added a smear of plum sauce, crispy “duck”, chopped veggies and salad leaves and rolled.

Super simple and super tasty :).

Spag bog: Fried onions, pepper, courgette with Sainsbury mince.  The I added a marinara sauce a la Chloe Coscarelli recipe and served with wholewheat spaghetti.  YUM!

5 minute pea & basil soup: cook up 500ml stock, added crushed garlic, add basil & 300g peas a few minutes later and cook.  Blend and serve with toasted sourdough bread.  (Add more or less peas depending on your taste). It tastes of spring!

Home made vanilla ice creamed served with biscuit and chocolate chunks. VERY GOOD!
