Banana & Chocolate Chip Cupcakes

Makes 12

Ingredients

  • 1/2 cup banana
  • 1 1/4 cup plain flour
  • 1/4 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 3/4 cup sugar
  • 1/4 cup oil
  • 2/3 cup ‘milk’
  • 1 tsp vanilla extract
  • 75g chocolate drops or smashed up chocolate bar
  • vanilla frosting
  1. Preheat oven to 180ยบC and line your tray with baking cases.
  2. Mash up the banana (I do this in a blender to get it really smooth).
  3. Sift all the dry ingredients into a bowl.
  4. Mix together oil, milk, vanilla and banana.
  5. Make a well in the dry ingredients and then add the wet ingredients, mix then add chocolate.
  6. Fill your baking cases and bake for 18 minutes.

I always leave mine in the tray for 5 minutes once they have come out of the oven and then transfer them to a wire rack.

Once they are completely cool you can do my favourite bit and frost them! I use the vegan fluffy buttercream recipe from Vegan Cupcakes Takeover The World. I halve the quantities and still end up with some left over! I also use less icing sugar then specified as I find it too sweet, start by adding just one cup and taste as you go.
