Berry Mousse (Raw Option)

  • 1 packet silken tofu
  • 600g mixed berries
  • agave nectar
  • icing sugar
  1. Blend and strain berries to remove the seeds.
  2. Blend berry juice and tofu, add agave nectar and icing sugar to taste.
  3. Serve with shortbread (recipe below).

You can make a rich chocolate mousse by switching the berries for 100g of dark chocolate.  Melt the chocolate in a bowl over a pan of hot water, letting it cool before adding to the tofu for blending.  You could also add lidful of Tia Maria!

Raw Option – replace the silken tofu with 4 medium ripened avocado and leave out the icing sugar.  For the chocolate version use raw chocolate instead of a regular bar.

Shortbread

Ingredients

  • 125g vegan spread
  • 55g caster sugar
  • 175g plain flour
  1. Heat the oven to 190ºC.
  2. Beat the vegan spread and sugar until pale.
  3. Stir in the flour to get a smoothe paste, turn out onto a work surface and gentle roll out until it is 1cm thick.
  4. Cut into fingers or rounds. sprinkle with a little extra sugar.
  5. Place on baking sheet and chill for 20 minutes.
  6. Then bake in the oven for 15-20 minutes.
