Chocolate & Cherry Cupcakes
Makes 12
Ingredients

- 1 cup plain flour
- 1 tsp baking powder
- 3/4 cocoa powder
- 1/4 tsp salt
- 1/4 oil
- 1/2 cup sugar
- 2 cups frozen cherries (defrosted and mashed - a few big chunks are good)
- 1 or 2 frozen cherries for the frosting (defrosted and pureed)
- Vanilla frosting
- Preheat oven to 180ºC and line your tray with baking cases.
- Sift the flour, cocoa, baking powder and salt into a bowl.
- Combine the mashed cherries, oil and sugar.
- Make a well in the dry ingredients and add the wet. Mix well.
- Pour into your baking cases and bake for 18 minutes.
- Make your favourite vanilla frosting (I use the fluffy buttercream from Vegan Cupcakes Take Over The World) and add the pureed cherry at the end.
