Chocolate & Cherry Cupcakes

Makes 12

Ingredients

  • 1 cup plain flour
  • 1 tsp baking powder
  • 3/4 cocoa powder
  • 1/4 tsp salt
  • 1/4 oil
  • 1/2 cup sugar
  • 2 cups frozen cherries (defrosted and mashed -  a few big chunks are good)
  • 1 or 2 frozen cherries for the frosting (defrosted and pureed)
  • Vanilla frosting
  1. Preheat oven to 180ºC and line your tray with baking cases.
  2. Sift the flour, cocoa, baking powder and salt into a bowl.
  3. Combine the mashed cherries, oil and sugar.
  4. Make a well in the dry ingredients and add the wet. Mix well.
  5. Pour into your baking cases and bake for 18 minutes.
  6. Make your favourite vanilla frosting (I use the fluffy buttercream from Vegan Cupcakes Take Over The World) and add the pureed cherry at the end.
