Chocolate & Ginger Cupcakes

Makes 16

Ingredients

  • 1/2 cup ‘milk’
  • 1 tsp cider vinegar
  • 4 pieces stem ginger
  • 3/4 cup granulated sugar
  • 1/4 oil
  • 1 cup flour
  • 1/3 cup cocoa
  • 1/2 tsp baking soda
  • 1/4 tsp baking powder
  • 1/4 tsp salt

For the ganache:

  • 1/8 cup ‘milk’
  • 2 oz dark chocolate
  • 1 tbsp maple syrup
  • vanilla frosting
  1. Preheat oven to 180ºC , line baking tray with cases.
  2. Sift all the dry ingredients together.
  3. Add the vinegar to the milk. Blitz the ginger (or cut up finely if you prefer some small chunks in the cake) and add along with the oil and sugar.
  4. Add the dry ingredients to the wet. Mix and pour into the cases.
  5. Bake for 16 minutes.
  6. Once cakes are cool make the ganache by pouring the milk into a pan and bringing to the boil. Remove from heat and stir in the chocolate and maple syrup. Keep stirring till smooth. Then place a layer of this on each cake.
  7. Frost with vanilla frosting and drizzle more ganache over the top.
