Coconut & Mango Chutney Cupcakes

Ingredients
- 3/4 coconut milk

- 3/4 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/4 cup oil
- 3/4 cup sugar
- mango chutney
- coconut frosting
- Preheat oven to 180ยบC and line your tray with baking cases.
- Sift all the dry ingredients.
- Add the oil and sugar to the coconut milk, and then add the dry. Mix well.
- Place one spoon of tsp batter in the case, then add tsp of mango chutney (try to get a chunk of mango chutney in if you can), then top with more batter. Bake for 18 minutes.
- I added a few tsps of the coconut milk to my normal frosting for that extra bit of coconutness.
