Coconut & Mango Chutney Cupcakes

Makes 13

Ingredients

  • 3/4 coconut milk
  • 3/4 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/4 cup oil
  • 3/4 cup sugar
  • mango chutney
  • coconut frosting
  1. Preheat oven to 180ยบC and line your tray with baking cases.
  2. Sift all the dry ingredients.
  3. Add the oil and sugar to the coconut milk, and then add the dry. Mix well.
  4. Place one spoon of tsp batter in the case, then add tsp of mango chutney (try to get a chunk of mango chutney in if you can), then top with more batter. Bake for 18 minutes.
  5. I added a few tsps of the coconut milk to my normal frosting for that extra bit of coconutness.
