Drunken Bakewell Tart Cupcakes

Makes 12

Ingredients

  • 3 tbsp Amaretto
  • top up the Amaretto with ‘milk’ till you have 3/4 cup
  • 1 tsp cider vinegar
  • 1 1/4 cup flour
  • 3/4 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/4 cup oil
  • 1/2 cup sugar plus 1 tbsp
  • jam (I normally would use strawberry but damson works too)
  • icing sugar and water
  1. Preheat oven to 180ยบC and line your tray with baking cases.
  2. Measure out the Amaretto add the milk and cider vinegar.
  3. Sift all the dry ingredients but the sugar.
  4. Add the oil and sugar to the wet, and then add the dry. Mix well.
  5. Pour into your baking cases, and put in the oven for 18 mins.
  6. Once the cakes are cool you need to fill them with jam. I used to have an old piping tool that looked like a big syringe that did the job all in one go. Instead you can use a chop stick to make a hole in the middle of each cake (be careful not to got through the bottom) and then use a piping bag to fill each hole with jam.
  7. Mix some icing sugar with a tiny bit of water, you don’t want it too runny, but you want it thin enough to run off the spoon. Drizzle this over the cakes.
  8. To make these non alcoholic, leave out the Amaretto, use 3/4 cup of milk and add a tsp of almond extract.
