When I became a vegan ice cream was far from my mind. I literally got through one day at a time and tried to cover the basics – having three meals a day, finding some good snacks & make sure I had toothpaste & washing stuff.
The first time that I had vegan ice cream was earlier this year at lula’s sweet apothecary in NYC. After over 2 years of no ice cream – OMG omg it was AMAZING. It was soooooo good that I went back another day to try a different flavour. What? Its for research……
So after that (too) brief ice cream affair I forgot all about it again as I knew I couldn’t get it back at home in the UK. So life continued with my mini muffin love affair.
Then the long, hot summer started and it was time to cool off. What better way to cool off than with ice cream? I googled a vanilla ice cream recipe, chucked in some honeycoombe and didn’t worry about the ice cream making machine. I took the ice cream out every hour and stirred. The flavour was ok but the ice crystals were not so good. Boooooo it’s not as easy as it looks. The ice cream went on the back burner again and I spent July baking cookies.
And then one Sunday, in the not too distant passed I wandered into a bookshop and aimlessly perused the cooking section and happened upon “one vegan scoop” by Wheeler del Toro. And how quickly your baking world can change forever in a moment!
I bought the book and quickly realised that I had to buy the bullet and buy an ice cream maker. If you follow me on twitter then you would have realised that I have been tweeting more than doing until this weekend…
Where to start with a vegan ice cream cookbook? Why at the beginning of course! Pg. 36 Vaniila ice cream – although I used a pod rather than extract. I have been meaning to cook with the vanilla pod for awhile and what a way to eat it!
I will tell the rest of the story in photo’s! My first ice cream expedition…
