Pancakes, truffles, smoothies & more

Its been at least a week or 21 meals and 14 snacks since we last “spoke” so its time for me to show you what I have been making, buying and most importantly EATING…
After the banana blueberry pancakes I made and consumed on shrove Tuesday I was inspired to make in pancake week. Armed with lots of ideas; carrot cake pancake, peanut butter chocolate and more I was all set to cook and eat. Unfortunately it didn’t happen and with food the thought doesn’t actually count. However I want to eat those pancakes still if you would like to make some for me?
There something about the change in the weather which has got me interested in smoothies and salads again. In the same way that cold weather makes me want pie and potatoes the sun has the reversed effect. I have been alternating between a banana, date, muesli, pumpkin seed & maca smoothie & a banana, cherry, muesli, pumpkin seed & maca smoothie this week.
I like to buy a few M&S mix & match salad pots to add some extra flavour into my salad but without doing the work of making it! I am a big fan of the mixed bean and giant cous cous.
Via twitter I heard about the new Cauldron adzuki bean kievs (thanks @embodiedtales) and decided that I wanted to try them. As far as I know they are available from Tesco & Waitrose. Its a mildly curried bean affair in breadcrumbs with a mango filling in the centre. LOVELY is my verdict (especially with salad).
I had a pumpkin to use up. Each time I opened the fridge it eyed me accusingly “what about me?” it implored. (Maybe as a vegan I shouldn’t put personalities on vegetables, but you know its for the blog right?!)
The pumpkin was chopped and roasted with onion & garlic into soup.
And then the rest (because they are quite large) was turned into curry with peas (I <3 peas).
And now snacks, this week has been filled with truffles and crumpets. I made the truffles early in the week from cashew, dates, agave & vanilla extract. The crumpets are topped with marmite & peanut butter – one of my ALL TIME favorite food combinations!
And all of this was thought about, prepared & cooked with one sock on and one sock off – my most creative attire.
