Sesame Seed Muffins

Makes 6 large muffins or 12 small

  • 3/4 cup plus 1 tbsp milk
  • 2 tsp ground flax seeds
  • 1/4 cup oil
  • 2/3 cups sugar
  • 1/3 cup tahini (make your own by grinding the seeds till a powder then adding a tiny bit of oil at a time till it’s a smooth consistency
  • 1 cup plus 2 tbsp wholemeal flour
  • 3/4 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  1. Preheat oven to 180 degrees C
  2. whisk together milk and flax seeds till frothy, add oil, sugar and tahini
  3. Sift together dry ingredients and add to the wet
  4. Pour into greased muffin tray and bake for 18-20 mins
