Spinach, Leek & Oyster mushroom in Cream Sauce
Serves 2-3
Ingredients
- 1/2 bag of spinach
- 1 small onion
- 2 leeks
- handful walnuts
- oyster mushrooms
- vegan cream
- 1 glove crushed garlic
- olive oil
- 1 tbsp vegan bouillon powder
- 4 handfuls of pasta
- Put a pan on a low heat add oil, diced onion, leek & garlic. Cover and sweat for 10 minutes.
- Add chopped nuts, sliced mushroom and washed spinach. Cover and continue cooking on slow heat.
- Add the pasta to a pan of boiling water, cook until a la dente.
- Add the cream, pasta and stock powder to the veggies and cook for a further 5-7 minutes.
- Optional – mix in some vegan cheese and serve with a sprinkling of cheese on top.
