Spinach, Leek & Oyster mushroom in Cream Sauce

Ingredients

  • 1/2 bag of spinach
  • 1 small onion
  • 2 leeks
  • handful walnuts
  • oyster mushrooms
  • vegan cream
  • 1 glove crushed garlic
  • olive oil
  • 1 tbsp vegan bouillon powder
  • 4 handfuls of pasta
  1. Put a pan on a low heat add oil, diced onion, leek & garlic.  Cover and sweat for 10 minutes.
  2. Add chopped nuts, sliced mushroom and washed spinach.  Cover and continue cooking on slow heat.
  3. Add the pasta to a pan of boiling water, cook until a la dente.
  4. Add the cream, pasta and stock powder to the veggies and cook for a further 5-7 minutes.
  5. Optional – mix in some vegan cheese and serve with a sprinkling of cheese on top.
