Stir Fry
I never get tired of eating veggie stir fry there are some key ingredients that keep it tasting good for me time & time again….
Ingredients – any veggies you have in the fridge, courgettes, baby corn, mange tout, curly kale (good for your iron intake), spinach, carrots, runner beans, mushrooms, cashew nuts, sesame seeds & sprouts. Chuck them all in or just a few, its up to you.
Stir fry sauce 
- a clove of grated garlic
- 1/2 tsp of chilli
- 1/2 tsp ginger
- soya sauce
- lime juice
- coriander
- 1/2 tsp miso paste
- Pour oil/fry light to a heated wok. Add the chilli, garlic and ginger and assorted veggies. Keep stiring
- After a couple of minutes add the soya sauce, lime juice and coriander then add in the 1/2 tsp of miso paste with a splash of water. Keep stiring
- Throw in the sesame seeds, cashew nuts & sprouts and cook for a couple more minutes and then serve.
A tasty sauce & fresh veggies are the key to a good stir fry and you can always vary the ingredients to change the flavour to suit your mood and your palate.
