Super Cheatin’ Banoffee Pie

I get great enjoyment from making things from scratch…most of the time. But even for this baking, cooking vegan machine there are occasions when I permit myself a short cut or two. So I grandly present my super quick banoffee pie:

Banoffee Pie

Makes 6 restrained portions


  • 12 biscuits (vegan digestives or oat biscuits I used Oatlands Oaties)
  • 2 tbsp margarine
  • 3 pots of Alpro soy dessert caramel flavour
  • 1 packet whippable soy cream (I used Soyatoo Soy Whipping Cream)
  • 2 ripe bananas
  1. Melt the margarine, whilst it’s melting smash those biscuits to smitherines! Once marg is melted add the biscuits and mix well. Leave to one side to cool
  2. Whip up the soy cream if required and slice the bananas.
  3. I think in a glass looks nicest if you’re serving for dessert at home, but if you’re travelling with the pie you can layer it straight into tupperware. Spread the biscuit and marg mixture over the base or your chosen receptacle, top with Aplro dessert, then add a layer of bananas and finally top with the cream (you could also do it sundae style and use a tall glass and just keep layering till you run out of ingredients). Grated chocolate on the top gives a nice finishing touch.
